Food Manufacturers

The Gluten-Free Food Program (GFFP) was established in 2004 by the Celiac Sprue Association (CSA) and was the first program to certify manufacturers and brands as gluten-free in the United States. Since then, the certification program has emerged as a prominent provider of gluten-free certification services, garnering recognition in the United States, Canada and globally. The GFFP Certified Mark of Trust™ logo is widely recognized by grocery retailers, food safety leaders, and gluten-free consumers in the United States, Canada and worldwide.

GFFP certification holds considerable value for manufacturers and brand owners across diverse sectors, serving as a vital tool to champion gluten-free food safety. As a leader in gluten-free certification, GFFP aims to certify manufactured products and provide the gluten-free community with reliable and transparent information about the gluten content and gluten-free quality of those products. GFFP certification further ensures that manufactured products meet our industry-leading standard of 5 ppm (parts-per-million) or less of gluten; other certification organizations use a much higher gluten threshold value of 10 ppm or more. It is also common for manufacturers to choose not to certify their products but rather self-declare and put a generic gluten-free logo on product packaging. In this case, it is a frequent practice to set a gluten threshold as high as 20 ppm, the maximum legal amount.

Restaurant and Food Service Establishments

In 2019 the Gluten-Free Food Program (GFFP) extended its certification program to include gluten-free certification for restaurants and food service establishments. GFFP gluten-free certification provides gluten-free restaurants and food service establishments with the highest standards and best practices to meet the special dietary needs of gluten-free diners. With certification, GFFP certified customers receive the GFFP Approved Mark of Trust™ gluten-free logo to use on menu boards, store front doors and window displays, as well as program messaging for websites and social media communications to market and promote the safe and reliable gluten-free dining experience.

All GFFP certified food establishments carrying our gluten-free logo must meet high-quality gluten-free food service standards and key staff must successfully complete GFFP’s online GF-Smart™ professional food safety training program.

An essential part of GFFP certification is staff training. Included with certification selected staff receive complimentary GF-Smart™ training. Training topics include planning and managing a gluten-free kitchen, ingredient sourcing & storage practices, gluten-free food preparation, customer engagement & serving practices, and gluten management strategies for avoiding cross-contamination. The GF-Smart™ training program not only ensure compliance with regulations for restaurant staff and owners, but also fosters confidence and a culture of responsibility with customers looking for a safe and reliable gluten-free dining experience.
