For over 10 years, I have experimented with all varieties of baked goods because I wasn’t happy with the gritty or gummy textures in most commercial gluten-free foods. I want my baked goods to allow those with a gluten-free lifestyle to feel “normal.” And, above all, I want to keep using my nerdy kitchen science to make people happy….because who doesn’t smile when they eat a fresh donut?
