Ingredients
- 2 cups sugar
- 1-1/2 cups vegetable oil
- 4 eggs
- 2 cups GF flour
- 2 tsp baking soda
- 3 tsp cinnamon
- 1 tsp salt
- 2 tsp vanilla extract
- 3 cups grated carrots about 6 carrots
Cream Cheese Frosting
- 1 stick butter
- 8 oz cream cheese
- 1 package confectioners sugar
- 2 tsp vanilla extract

Instructions
- Preheat oven to 325 degrees.
- In a large bowl, combine sugar and oil and add eggs.
- In a separate bowl, sift flour, baking soda, cinnamon, and salt together. Add to sugar mixture and beat well.
- Add vanilla and grated carrots.
- Divide batter into 3 8-inch layer cake pans, which have been well greased.
- Bake for 45 minutes or until toothpick stuck in center of cake comes out smooth.
- For the cream cheese frosting: Soften butter and cream cheese and beat together.
- Add confectioners sugar and vanilla until spreading consistency. Frost cake.
Recipe Notes
You can also use an angel food pan instead of the round pans but increase baking time to 1 hour and 10 minutes. If using the angel food pan, cut frosting recipe in half.
