Carrot Cake
Cream Cheese Frosting
  1. Preheat oven to 325 degrees.
  2. In a large bowl, combine sugar and oil and add eggs.
  3. In a separate bowl, sift flour, baking soda, cinnamon, and salt together. Add to sugar mixture and beat well.
  4. Add vanilla and grated carrots.
  5. Divide batter into 3 8-inch layer cake pans, which have been well greased.
  6. Bake for 45 minutes or until toothpick stuck in center of cake comes out smooth.
  7. For the cream cheese frosting: Soften butter and cream cheese and beat together.
  8. Add confectioners sugar and vanilla until spreading consistency. Frost cake.
Recipe Notes

You can also use an angel food pan instead of the round pans but increase baking time to 1 hour and 10 minutes. If using the angel food pan, cut frosting recipe in half.
