Coffee Blond Brownies
Everyone has a definite preference for one type of brownie. These are for those who love coffee more than chocolate but find it hard to forgo chocolate altogether. It's a chewy addition for the brownie lover’s repertoire.

Instructions
  1. Heat the brown sugar and butter in a medium saucepan over medium low heat until the butter melts.
  2. Dissolve the coffee in the hot water and stir into the butter mixture. Let cool at room temperature.
  3. Preheat oven to 350 degrees. Spray an 11x8” baking pan with Pam.
  4. When the butter mixture is cool, beat in the eggs and vanilla.
  5. Sift the flour, baking powder and salt together and stir into the butter mixture with a wooden spoon. Stir in the chocolate chips.
  6. Spread the mixture evenly in the prepared pan with a rubber spatula. Bake until lightly browned, 25-30 minutes. Do not over bake.
  7. Cool completely and cut into 2” squares.
