Ingredients
- 1 lb brown sugar
- 3/4 cup butter
- 2 Tbsp strong instant coffee powder
- 1 Tbsp hot water
- 2 eggs
- 2 Tbsp vanilla extract
- 2 cups GF flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup semi-sweet chocolate bits optional

Instructions
- Heat the brown sugar and butter in a medium saucepan over medium low heat until the butter melts.
- Dissolve the coffee in the hot water and stir into the butter mixture. Let cool at room temperature.
- Preheat oven to 350 degrees. Spray an 11x8” baking pan with Pam.
- When the butter mixture is cool, beat in the eggs and vanilla.
- Sift the flour, baking powder and salt together and stir into the butter mixture with a wooden spoon. Stir in the chocolate chips.
- Spread the mixture evenly in the prepared pan with a rubber spatula. Bake until lightly browned, 25-30 minutes. Do not over bake.
- Cool completely and cut into 2” squares.
