Corned Beef Brisket

Ingredients
  

  • 4 cups hot water
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon fresh ground pepper
  • 1 large onion cut into quarters
  • 3 lbs GF corned beef brisket
  • 8 small white or yellow potatoes scrubbed and cut into quarters
  • 1 head cabbage cored and cut into 10 wedges (about 1 1/2 pounds)
  • 4 -5 carrots cut into 1 inch pieces

Beef Rub

  • 2 tsp teaspoons coarse black pepper (use fresh cracked pepper)
  • 2 tsp paprika
  • 1 tsp oregano leaves (dried)
  • 1/2 tsp ground cumin
  • 1 tsp granulated garlic

Directions

  • Combine the water vinegar, sugar, pepper and onions, in a 6 quart crock pot and mix well.
  • Place corned beef that has been rubbed in spice mixture in crock pot.
  • Scatter the potatoes and carrots over the top and along the sides.
  • Cover and cook on low heat setting 6 hours.
  • After 6 hours, remove the lid and scatter the cabbage wedges over the top.
  • Cover and continue cooking on low 4 hours longer, or until beef is tender.

Beef Rub Directions

  • Mix ingredients together in bowl.
  • Prepare meat by brushing the surface with oil before applying rub.
  • Apply rub 2 to 4 hours before cooking.
  • The rubbed meat can be refrigerated overnight, as this will increase the flavor slightly.
