Corned Beef Brisket
apple cider vinegar
fresh ground pepper
cut into quarters
GF corned beef brisket
small white or yellow potatoes
scrubbed and cut into quarters
cored and cut into 10 wedges (about 1 1/2 pounds)
cut into 1 inch pieces
teaspoons coarse black pepper (use fresh cracked pepper)
oregano leaves (dried)
Combine the water vinegar, sugar, pepper and onions, in a 6 quart crock pot and mix well.
Place corned beef that has been rubbed in spice mixture in crock pot.
Scatter the potatoes and carrots over the top and along the sides.
Cover and cook on low heat setting 6 hours.
After 6 hours, remove the lid and scatter the cabbage wedges over the top.
Cover and continue cooking on low 4 hours longer, or until beef is tender.
Beef Rub Directions
Mix ingredients together in bowl.
Prepare meat by brushing the surface with oil before applying rub.
Apply rub 2 to 4 hours before cooking.
The rubbed meat can be refrigerated overnight, as this will increase the flavor slightly.
