Curried Chicken in Coconut Milk

Instructions
  1. In a large flameproof casserole, heat the oil and cook the onion and garlic for 2 minutes. Add the coriander, curry, cumin, turmeric, and cayenne pepper. Stir well.
  2. Add the chicken pieces and sear on each side for 3 minutes.
  3. Add the coconut milk and salt. Stir well and bring to a boil. Cover the pan and lower the heat. Simmer for 20 minutes, turning the chicken halfway through cooking.
  4. Stir in the spinach, cover the pan, and cook for 5 minutes. Stir in the cilantro, cover, and cook for 2 minutes.
