Easter Chicken
This is crispy and tangy and yummy all at once.

Ingredients
1/3
cup
Dijon mustard
1/4
cup
sherry
3
tsp
honey
6
boneless skinless chicken breasts
2
cups
fine GF breadcrumbs
1
cup
grated extra sharp cheddar or Parmesan cheese
red pepper flakes, to taste
salt & pepper, to taste
Instructions
Mix together mustard, sherry, and honey. Marinade the chicken in it for 1 hour.
Preheat oven to 450 degrees.
Combine breadcrumbs, cheese, red pepper, salt, and pepper.
Take chicken breasts out of the marinade and still dripping, roll chicken in breadcrumb mix.
Place in greased baking pan uncovered. Sprinkle extra bread mix over top of chicken and bake 25-30 minutes.
