Ingredients
- vegetables of choice (onions, peppers, zucchini, etc) diced
- bacon cooked and crumbled
- cheddar cheese grated
- 7 eggs
- 2-1/4 cups half & half
- 1/4 tsp salt
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- GF non-stick cooking spray

Instructions
- Sauté vegetables until almost soft. Add crumbled bacon.
- Spray cooking spray on 2 muffin pans. Put grated cheddar cheese on the bottom of each muffin tin to 1/3 of the way up. Add veggies & bacon until 2/3 full.
- Combine eggs and half & half. Add salt, cayenne pepper, and black pepper. Fill muffin tins to just below the top.
- Bake in preheated 400-degree oven for 15 -20 minutes, then turn oven to 325 and continue baking for 10-15 minutes.
- Serve them right from the muffin tins or use a spoon to remove them while warm and place on a serving platter.
