Eggs in Muffin Tins
This works well for a crowd. Change up the flavors anyway you wish!

Instructions
  1. Sauté vegetables until almost soft. Add crumbled bacon.
  2. Spray Pam on 2 muffin pans. Put grated cheddar cheese on the bottom of each muffin tin to 1/3 of the way up. Add veggies & bacon until 2/3 full.
  3. Combine eggs and half & half. Add salt, cayenne pepper, and black pepper. Fill muffin tins to just below the top.
  4. Bake in preheated 400-degree oven for 15 -20 minutes, then turn oven to 325 and continue baking for 10-15 minutes.
  5. Serve them right from the muffin tins or use a spoon to remove them while warm and place on a serving platter.
