Eggs in Muffin Tins

This works well for a crowd. Change up the flavors anyway you wish!
Servings 24 muffins


  • vegetables of choice (onions, peppers, zucchini, etc) diced
  • bacon cooked and crumbled
  • cheddar cheese grated
  • 7 eggs
  • 2-1/4 cups half & half
  • 1/4 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • GF non-stick cooking spray


  • Sauté vegetables until almost soft. Add crumbled bacon.
  • Spray cooking spray on 2 muffin pans. Put grated cheddar cheese on the bottom of each muffin tin to 1/3 of the way up. Add veggies & bacon until 2/3 full.
  • Combine eggs and half & half. Add salt, cayenne pepper, and black pepper. Fill muffin tins to just below the top.
  • Bake in preheated 400-degree oven for 15 -20 minutes, then turn oven to 325 and continue baking for 10-15 minutes.
  • Serve them right from the muffin tins or use a spoon to remove them while warm and place on a serving platter.
