Ingredients
Salad
- 3 heads Boston Lettuce
- 1 head Romaine lettuce
- 1/2 box baby spinach
- 1/2 box baby Romaine lettuce
- 1/2 box baby arugula
- 2 heads endive, leaves peeled off and cut into thirds
- 1 bunch scallions, chopped
- 1/2 log goat cheese, crumbled
- 1/2 bag Craisins
- 2 apples, chopped
Orange Viniagrette
- 1/2 cup rice vinegar
- 1/2 cup honey
- 1 Tbsp mustard
- salt & pepper, to taste
- 1 cup olive oil

Instructions
- Combine all salad ingredients in a bowl.
- To make dressing, whisk together rice vinegar, honey, mustard, salt, and pepper. Slowly add olive oil, whisking to incorporate.
