- haricots verts
- 4 Tbsp soft butter
- 1 Tbsp scallions, diced
- 1 Tbsp minced fresh dill
- 1 Tbsp minced fresh flat-leaf parsley
- 1 tsp salt
- 1/2 tsp pepper

Instructions
- Boil the beans for 2 minutes, then drain.
- Combine remain ingredients to make herb butter. Serve beans warm with butter.
Recipe Notes
Either green beans or Haricot Verts can be used. This herb butter works on any vegetable, even chicken and fish! Just remember to cook whatever vegetable you use until crunchy tender, not totally soft. This particular recipe will work well with about 1 pound of beans but everyone’s tastes are different; some like more buttery flavor than others. Leftover butter can be kept for 3 months in refrigerator or indefinitely in the freezer.
