- 2/3 cup extra virgin olive oil mild tasting works well too
- 6 cloves garlic finely chopped
- 2 tsp chili powder
- 2 tsp thyme
- 4 tsp oregano
- 4 tsp salt
- 4 tsp pepper
- Mix all of the ingredients together.
- Marinate chicken for 6-24 hours. Marinate vegetables for 6 hours.
- Cook thoroughly.
Dried spices work well in this too.
Cut the chicken into pieces and marinate overnight. Place on kebab skewers and grill.
Marinate fish and grill.
Favorite vegetables include: peppers, onions, mushrooms, zucchini, squash, broccoli, cauliflower and carrots. Cut the vegetables and marinate for a few hours. Place in grill basket and cook to desired tenderness.
