Pecan Pie

A timeless recipe shared by my Aunt Eleanor who died so many years ago, but I think of her every time I make this rich and delicious pie.

Ingredients
  

  • 3 eggs
  • 1 cup dark corn syrup
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 Tbsp GF flour
  • 2 Tbsp butter, melted
  • 1 cup pecans
  • 9" pie crust, blind baked

Instructions
 

  • Preheat oven to 425 degrees.
  • Beat eggs. Add corn syrup, brown sugar, and vanilla.
  • Sift in flour and stir in melted butter. Add pecans.
  • Place in a 9” round pie pan and bake for 10 minutes. Reduce heat to 325 degrees and bake for about 45 minutes.
