Instructions
- Preheat oven to 450 degrees. Generously grease 9 out of the 12 small size popover shapes in the pan.
- In a bowl, combine eggs and salt. Beat until light and airy.
- Stir in milk and beat until light and airy.
- Add flour and mix until smooth.
- Heat popover pan in oven until hot (about 3 minutes). Fill popover cups about ¾ full. Bake 15 minutes.
- Reduce oven temperature to 350 degrees and bake about 10 minutes longer, until popovers are golden brown. They should be crisp on the outside.

Recipe can be doubled and tripled with no issues.
Baking spray didn’t work as well as butter or margarine for greasing the cups. The point of popovers is to put as much air into the batter as possible so they will rise, so don’t skimp on the beating of the eggs and milk. Also the popovers cooked more quickly in my oven… at 10 minutes less. Since everyone’s ovens are different, just be aware that there is flexibility here. Good luck!
