Combine onions, sprouts, mushrooms, jalapeno, tomatoes, capers, and olives and sauté. Add Worcestershire sauce, curry paste, and spices.
While stuffing cooks, combine glaze ingredients in a bowl and set aside.
Once stuffing is cooked (vegetables should be soft), spread it over pork then roll up and place in aluminum foil lined baking dish. Tie up if possible. Sprinkle with salt & pepper. Then cover with glaze.
Bake for 15 minutes. Then bake at 350 for 30 minutes. Baste throughout cooking.
Remove pork from pan to cutting board and pour drippings into bowl. Add more glaze to bowl if it wasn’t all used at the beginning. Use as dipping sauce.
