- 1/2 jar apricot jelly
- 1 Tbsp sherry
- 1 Tbsp GF soy sauce
- 1 Tbsp Catalina salad dressing

Instructions
- Preheat oven to 450 degrees.
- Combine onions, sprouts, mushrooms, jalapeno, tomatoes, capers, and olives and sauté. Add Worcestershire sauce, curry paste, and spices.
- While stuffing cooks, combine glaze ingredients in a bowl and set aside.
- Once stuffing is cooked (vegetables should be soft), spread it over pork then roll up and place in aluminum foil lined baking dish. Tie up if possible. Sprinkle with salt & pepper. Then cover with glaze.
- Bake for 15 minutes. Then bake at 350 for 30 minutes. Baste throughout cooking.
- Remove pork from pan to cutting board and pour drippings into bowl. Add more glaze to bowl if it wasn’t all used at the beginning. Use as dipping sauce.
