Quiche Lorraine
This makes a wonderful lunch or a light supper served with a crispy green salad. No crust saves on time and calories!
Ingredients

bacon drippings
1
cup
thinly sliced onion
1-1/2
cups
cubed Gruyere or cheddar cheese
4
slices
crisp bacon, crumbled
5
eggs, lightly beaten
2
cups
light cream
or 1 cup heavy cream and 1 cup milk
1/2
tsp
salt
1/4
tsp
ground nutmeg
1/4
tsp
white pepper
1/4
tsp
red pepper flakes
Instructions
Cook onions in bacon drippings until transparent.
Cover bottom of pie pan with onions, cheese cubes, and crumbled bacon.
Combine remaining ingredients and pour over the onions and cheese.
Bake in very hot 450 degree oven for 10 minutes then reduce heat to 350 degrees and bake for 15-20 minutes or until knife comes out clean.
