Ingredients
Seafood Mix
- 3 Tbsp butter
- 2 Tbsp onion minced
- 1 cup cooked shellfish shrimp, crab, or lobster
- 1/4 tsp salt
- dash freshly ground black pepper
- 2 Tbsp dry white vermouth
Egg Mix
- 3 eggs
- 1 cup whipping cream
- 1 Tbsp seafood cocktail sauce or tomato paste
- 1/4 tsp salt
- dash freshly ground black pepper
- 1/4 cup grated Swiss cheese
- 8" pastry shell prebaked 5 minutes

Instructions
- Cook onions in butter over moderate heat until tender, not browned (about 1-2 minutes).
- Add shellfish and stir gently while cooking for 2 more minutes more.
- Season and add wine. Simmer for a minute. Set aside to cool.
- In a separate bowl, beat eggs, cream, tomato paste, salt, and pepper.
- Gradually blend in shellfish mixture. Pour into prebaked pastry shell.
- Sprinkle cheese over all and bake 25-30 minutes.
Recipe Notes
If prepared ahead of time, store seafood mix and egg mix separately.
The nutty flavor of Swiss cheese is best for a seafood quiche.
