Seafood Quiche

Seafood Mix
  1. Cook onions in butter over moderate heat until tender, not browned (about 1-2 minutes).
  2. Add shellfish and stir gently while cooking for 2 more minutes more.
  3. Season and add wine. Simmer for a minute. Set aside to cool.
  4. In a separate bowl, beat eggs, cream, tomato paste, salt, and pepper.
  5. Gradually blend in shellfish mixture. Pour into prebaked pastry shell.
  6. Sprinkle cheese over all and bake 25-30 minutes.
Recipe Notes

If prepared ahead of time, store seafood mix and egg mix separately.

The nutty flavor of Swiss cheese is best for a seafood quiche.
