Strawberry Salad



  • strawberries
  • mandarin oranges
  • spinach
  • baby Romaine or red Romaine
  • white hearts of Romaine
  • bacon
  • endive
  • scallions

Pecan Brittle

  • 2 cups pecan pieces
  • 1 cup sugar
  • 4 Tbsp butter


  • 6 strawberries, minced
  • 1/2 cup honey
  • 1/4 cup balsamic vinegar or rice vinegar
  • salt & pepper
  • 1 cup olive oil


  • Combine salad ingredients and set aside.
  • To make pecan brittle: Line a baking sheet with greased foil. In a heavy 10” skillet, combine pecans with sugar and butter. Cook, over medium-high heat until sugar begins to melt. Reduce heat to low and continue cooking until sugar is golden brown, stirring occasionally.
  • Remove from heat. Pour onto prepared baking sheet and cool completely. Break into clusters.
  • To make dressing: Combine strawberries, honey, vinegar, salt, and pepper. Slowly add olive oil, whisking to incorporate.
  • Add pecan brittle and dressing to salad before serving.
