Ingredients
Pecan Brittle
- 2 cups pecan pieces
- 1 cup sugar
- 4 Tbsp butter
Dressing
- 6 strawberries, minced
- 1/2 cup honey
- 1/4 cup balsamic vinegar or rice vinegar
- salt & pepper
- 1 cup olive oil

Instructions
- Combine salad ingredients and set aside.
- To make pecan brittle: Line a baking sheet with greased foil. In a heavy 10” skillet, combine pecans with sugar and butter. Cook, over medium-high heat until sugar begins to melt. Reduce heat to low and continue cooking until sugar is golden brown, stirring occasionally.
- Remove from heat. Pour onto prepared baking sheet and cool completely. Break into clusters.
- To make dressing: Combine strawberries, honey, vinegar, salt, and pepper. Slowly add olive oil, whisking to incorporate.
- Add pecan brittle and dressing to salad before serving.
