Ingredients
- 1 cup oil
- 1 cup sugar
- 1/2 cup cider vinegar
- 1 can (15 oz) black beans
- 1 can (15 oz) black-eyed peas
- 12 to 16 oz frozen shoepeg corn
- 1 cup chopped celery
- 1/2 cup onion
- 1 sm. jar pimentos
- 1 jalapeno, chopped
- cilantro, to taste

Instructions
- Bring oil, sugar, and vinegar to a boil until sugar dissolves. Then cool to room temp.
- Combine remaining ingredients together, then pour cooled sugar/vinegar mixture over it.
- Marinate overnight. Strain and serve with Fritos Scoops.
