- 2 3/4 c GF flour
- 1/2 tsp salt
- 1/4 tsp xanthan gum
- 16 Tbsp unsalted butter
- 1 c granulated sugar
- 1 egg + 1 yolk
- 2 tsp GF vanilla extract

Instructions
- Combine flour, salt, and xanthan gum: whisk and set aside.
- Beat butter and sugar until soft and fluffy. Add in 1 egg + 1 yolk and vanilla extract. Beat until well combined.
- Incorporate flour mixture until well combined.
- Divide dough into 4 even pieces.
- Shape each piece into a 4 inch disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Roll out each disc between 2 pieces of parchment.
- Refrigerate dough for another 30 minutes.
- Cut the dough with desired cookie cutter.
- Pop into freezer for 10 minutes.
- Bake at 325 for 12 minutes.
