Ingredients
- 2 cups GF flour
- 1/2 cup GF powdered sugar
- zest of 1 lemon
- 1/2 tsp salt
- 9 Tbsp butter
- 4 eggs
- 1 cup granulated sugar
- 3/4 tsp gf baking powder
- 2/3 cup lemon juice freshly squeezed

Instructions
- Combine 1 1/3 cup flour, powdered sugar, lemon zest, and salt. Whisk to combine.
- Add melted butter and mix until a crumbly dough forms.
- Press dough into a greased 8x8 pan.
- Bake at 325 for 15 minutes.
- While dough bakes, combine eggs, sugar, baking powder, lemon juice, and 2/3 cup flour.
- Pour filling over the freshly baked crust.
- Bake at 325 for 30 minutes.
- Refrigerate overnight, and top with more powdered sugar to serve.
