Ingredients
- 2 cups GF flour
- 1 tsp xanthan gum
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1 cup mashed bananas
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup crushed pineapple
- 1/2 cup toasted pecans

Instructions
- Pre-heat oven to 350.
- Combine flour, xanthan gum, cinnamon, baking soda, and salt.
- In a separate bowl, combine eggs, mashed bananas, brown sugar, granulated sugar, vegetable oil, and vanilla extract.
- Create a well in the dry ingredients and add the wet mixture. Fold to combine.
- Add in crushed pineapple and pecans.
- Evenly distribute batter into a prepared cupcake tin.
- Bake for 25 to 30 min.
- Let cupcakes cool completely before frosting.
