TikTok Recipe for Hummingbird Cupcakes

Ingredients
  

  • 2 cups GF flour
  • 1 tsp xanthan gum
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup mashed bananas
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple
  • 1/2 cup toasted pecans

Instructions
 

  • Pre-heat oven to 350.
  • Combine flour, xanthan gum, cinnamon, baking soda, and salt.
  • In a separate bowl, combine eggs, mashed bananas, brown sugar, granulated sugar, vegetable oil, and vanilla extract.
  • Create a well in the dry ingredients and add the wet mixture. Fold to combine.
  • Add in crushed pineapple and pecans.
  • Evenly distribute batter into a prepared cupcake tin.
  • Bake for 25 to 30 min.
  • Let cupcakes cool completely before frosting.
