Instructions
  1. In a medium size bowl, combine shrimp (or chicken), soy sauce, and rice vinegar. Add coleslaw mix, parsley, and mint.
  2. To make dipping sauce, whisk together all ingredients in a small bowl.
  3. Serve shrimp salad in Boston lettuce leaves with dipping sauce.
